Hungarian Palacsinta (Hungarian Pancakes)
Ingredients
For the pancakes:
2 cups (250 g) all-purpose flour
2 eggs
2 cups (500 ml) milk
1 cup (250 ml) sparkling water
1 tablespoon sugar
1 pinch salt
2 tablespoons vegetable oil
For the filling:
Apricot jam, chocolate spread, sweet cottage cheese, or ground walnuts mixed with sugar
Instructions
In a large bowl, whisk together the eggs, milk, sparkling water, sugar, salt, and oil.
Gradually add the flour and whisk until the batter is smooth.
Let the batter rest for 15–20 minutes.
Heat a lightly oiled non-stick pan over medium heat.
Pour a small amount of batter into the pan and swirl to create a thin pancake.
Cook for about 1 minute on each side until lightly golden.
Spread your chosen filling over each pancake.
Roll the pancakes tightly, as shown in the picture.
Serve warm and dust with powdered sugar if desired.
Serving suggestion: In Hungary, palacsinta is often filled with apricot jam or sweetened walnut filling and enjoyed as a dessert or a sweet
