Hungarian Apricot Jam Pillows (Lekváros Papucs)
Ingredients
For the dough:
250 g (2 cups) all-purpose flour
200 g (7 oz) cold butter
200 g (7 oz) cream cheese
1 pinch salt
For the filling:
150 g (½ cup) thick apricot jam
For decoration:
Powdered sugar
Instructions
In a bowl, mix the flour and salt.
Cut in the cold butter until the mixture resembles coarse crumbs.
Add the cream cheese and knead into a smooth dough.
Wrap the dough and refrigerate for 1 hour.
Preheat the oven to 180°C (350°F).
Roll out the dough to about 3 mm (⅛ inch) thickness.
Cut into squares (about 8 cm / 3 inches).
Place a small spoonful of apricot jam in the center of each square.
Fold opposite corners toward the center and gently press them together.
Arrange on a baking tray lined with parchment paper.
Bake for 15–20 minutes or until lightly golden.
Let cool and dust generously with powdered sugar.
Serving
Serve with coffee or tea. These pastries are especially popular during holidays and family gatherings in Hungary.
