🍰 Hungarian Berry Cake Recipe
Ingredients
For the Cake:
- 3 large eggs
- 150 g granulated sugar
- 1 packet vanilla sugar
- 120 ml vegetable oil
- 150 ml milk
- 250 g all-purpose flour
- 1½ teaspoons baking powder
- 1 teaspoon vanilla extract
- A pinch of salt
- 250–300 g fresh or frozen mixed berries
Optional:
- 1 tablespoon flour, for coating the berries
- Powdered sugar, for serving
- Fresh mint or extra berries for decoration
Instructions
1. Prepare the Oven
Preheat your oven to 175°C (350°F). Grease a rectangular baking dish and line the bottom with baking paper.
2. Prepare the Batter
In a large bowl, beat the eggs, sugar, and vanilla sugar until light and fluffy.
Gradually add the vegetable oil, milk, and vanilla extract. Mix until everything is well combined.
In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring gently until you have a smooth, thick batter.
3. Add the Berries
If using fresh berries, gently wash and dry them. Toss them with a tablespoon of flour. This can help prevent them from sinking too deeply into the batter.
Fold about two-thirds of the berries into the cake mixture.
4. Bake
Pour the batter into the prepared baking dish and spread it evenly. Scatter the remaining berries over the top.
Bake for approximately 30–40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
5. Cool and Serve
Allow the cake to cool in the dish for 10–15 minutes before slicing.
Dust with powdered sugar and serve warm or completely cooled. A spoonful of whipped cream or vanilla ice cream makes an especially delicious accompaniment.

Tips for the Best Berry Cake
Use different berries: Raspberries, sour cherries, blackberries, blueberries, and red currants all work beautifully.
Frozen berries are fine: There is no need to completely thaw frozen berries. Add them directly to the batter, although the baking time may need a few extra minutes.
Don't overmix: Once the flour is incorporated, mix only until combined. Overmixing can make the cake dense.
Check before removing: Baking times can vary depending on the size and depth of your baking dish. Always test the center with a wooden skewer.
Serving Suggestion
For a classic homemade presentation, simply sprinkle the cooled cake with powdered sugar and garnish with a few fresh berries. For a richer dessert, serve each slice with vanilla cream, whipped cream, or a scoop of vanilla ice cream.
