Hungarian Meatballs (Fasírt) with Creamy
Hungarian Meatballs (Fasírt) with Creamy Garlic Dip
These crispy, golden-brown Hungarian Meatballs, known as Fasírt, are a classic comfort food that brings together seasoned ground meat, garlic, paprika, and fresh herbs. They are deliciously crisp on the outside while remaining tender and flavorful inside.
Served with a creamy garlic dip, fresh parsley, and a wedge of lemon, this Hungarian-inspired dish makes a wonderful appetizer, snack, or hearty family meal.
Ingredients
For the Hungarian Meatballs
- 500 g (1.1 lb) ground pork or a mixture of pork and beef
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 egg
- 2 slices of white bread
- 3–4 tablespoons milk
- 1 teaspoon sweet Hungarian paprika
- ½ teaspoon ground black pepper
- 1 teaspoon salt
- ½ teaspoon dried marjoram
- 2 tablespoons fresh parsley, chopped
- 2–3 tablespoons breadcrumbs
- Vegetable oil, for frying
For the Creamy Garlic Dip
- 200 g sour cream
- 1–2 cloves garlic, finely minced
- 1 tablespoon mayonnaise
- Salt and black pepper, to taste
- 1 tablespoon chopped fresh parsley
- A small squeeze of lemon juice
Instructions
1. Prepare the Bread
Place the bread slices in a small bowl and pour over the milk. Let them soak for several minutes, then gently squeeze out the excess milk and crumble the bread.
2. Make the Meatball Mixture
In a large bowl, combine the ground meat, soaked bread, chopped onion, garlic, egg, paprika, black pepper, salt, marjoram, parsley, and breadcrumbs.
Mix everything thoroughly until the ingredients are evenly combined. Avoid overmixing, as this can make the meatballs too dense.
3. Shape the Meatballs
Using slightly wet hands, shape the mixture into small balls, approximately the size of a walnut. Flatten them slightly so they cook evenly.
4. Fry Until Crispy
Heat enough vegetable oil in a large frying pan to cover the bottom.
Place the meatballs into the hot oil in batches. Fry over medium heat for about 4–5 minutes per side, turning occasionally, until deeply golden brown and completely cooked through.
Transfer the cooked meatballs to a plate lined with paper towels to remove excess oil.
5. Prepare the Garlic Dip
Mix the sour cream, mayonnaise, garlic, parsley, lemon juice, salt, and black pepper in a small bowl.
Taste and adjust the seasoning as desired.
6. Serve
Arrange the Hungarian meatballs on a serving plate. Garnish with fresh parsley and serve warm with the creamy garlic dip and lemon wedges.

Tips for Perfect Hungarian Meatballs
- Use a combination of pork and beef for a richer flavor and juicy texture.
- Do not skip the paprika—sweet Hungarian paprika gives the meatballs their characteristic flavor.
- Let the meat mixture rest for 10–15 minutes before shaping.
- Fry over medium heat so the outside becomes crispy without burning before the center is cooked.
- For a lighter version, bake the meatballs at 200°C (400°F) for approximately 20–25 minutes, turning halfway through.
