Hungarian Smoked Sausage (Hungarian Kolbász)
Ingredients
2 kg pork shoulder, finely minced
500 g pork back fat, finely diced or minced
40 g sweet Hungarian paprika
10–15 g hot Hungarian paprika
35–40 g salt
10 g garlic, finely crushed
1 teaspoon ground black pepper
1 teaspoon ground caraway seeds
100 ml cold water

Instructions
Prepare the meat:
Cut the pork and fat into small pieces and keep them very cold.
Season:
Place the pork and fat in a large bowl. Add paprika, salt, garlic, black pepper, and caraway seeds.
Mix thoroughly:
Add the cold water and knead the mixture for about 5–10 minutes, until the spices are evenly distributed and the mixture becomes sticky.
Fill the casings:
Rinse and soak the pork casings according to the package instructions. Stuff the sausage mixture firmly into the casings, avoiding air pockets. Twist into long links.
Dry:
Hang the sausages in a cool, clean, well-ventilated place for several hours or overnight.
Smoke:
Traditionally, Hungarian kolbász is cold-smoked using mild hardwood such as beech. Smoke slowly for several days, depending on the desired flavor and drying conditions.
Cure and dry:
Hang the sausages in a cool, well-ventilated place until they become firm and develop the desired texture.
Serving
Slice the finished Hungarian kolbász thinly and serve with fresh bread, mustard, pickles, onions, and Hungarian peppers.

ying on ordinary salt alone.
