Traditional Hungarian Smoked Sausage (Kolbász)
Ingredients
1 kg pork shoulder, finely minced
250 g pork belly or pork fat, finely chopped
20–22 g salt
25–30 g sweet Hungarian paprika
5–10 g hot Hungarian paprika, to taste
4–5 cloves garlic, crushed
1 teaspoon ground black pepper
1 teaspoon caraway seeds, lightly crushed
50 ml cold water

Method
Prepare the meat: Cut the pork and fat into small pieces and keep them very cold.
Mix the seasoning: Combine salt, sweet paprika, hot paprika, garlic, black pepper, and caraway.
Combine: Mix the pork and fat thoroughly with the seasoning. Add the cold water and knead until the mixture becomes sticky and well blended.
Rest: Cover and refrigerate for 12–24 hours so the flavors develop.
Stuff: Rinse the natural casings and fill them with the meat mixture, avoiding air pockets. Twist or tie into sausages.
Dry: Hang the sausages in a cool, clean, well-ventilated place until the surface is dry.
Smoke: Traditionally, Hungarian kolbász is cold-smoked with hardwood for several days. Use an appropriate tested curing recipe and curing salt when making shelf-stable smoked sausage.
Mature: Hang in a suitable cool, controlled environment until the sausage reaches the desired firmness and flavor.
Serving
Slice the finished Hungarian kolbász thinly and serve with fresh bread, mustard, pickles, onions, and paprika. It is also excellent in Hungarian dishes such as lecsó, bean soup, or potato dishes.
