Hungarian Cottage Cheese Pancakes (Túrós Palacsinta)
Ingredients
For the pancakes:
2 cups all-purpose flour
2 eggs
2 cups milk
1 cup sparkling water
1 tablespoon sugar
1 pinch of salt
1 tablespoon vegetable oil
Oil or butter, for frying
For the filling:
2 cups Hungarian-style cottage cheese or ricotta
3 tablespoons powdered sugar
1 teaspoon vanilla extract
1 teaspoon grated lemon zest
1 egg yolk
2 tablespoons sour cream
A small handful of raisins (optional)
For serving:
Powdered sugar
Whipped cream
Honey, optional
Instructions
Make the batter: Whisk the eggs, milk, sparkling water, sugar, and salt together. Gradually add the flour and whisk until smooth. Stir in the oil and let the batter rest for about 15 minutes.
Cook the pancakes: Heat a lightly oiled non-stick pan over medium heat. Pour in a small amount of batter and swirl the pan to create a very thin pancake. Cook for about 1 minute on each side. Repeat with the remaining batter.
Prepare the filling: Mix the cottage cheese, powdered sugar, vanilla, lemon zest, egg yolk, and sour cream until creamy. Add raisins if desired.
Fill the pancakes: Place a spoonful of the cottage cheese mixture in the center of each pancake. Fold or roll the pancake around the filling.
Serve: Arrange the filled pancakes on a plate and dust generously with powdered sugar. Top with whipped cream and a drizzle of honey if desired.
