🇭🇺 Hungarian Creamy Chicken Ragout Soup
Ingredients
For the soup:
- 500 g boneless chicken breast or chicken thighs, cut into bite-sized pieces
- 2 tablespoons vegetable oil or butter
- 1 medium onion, finely chopped
- 2 carrots, sliced
- 1–2 parsley roots or parsnips, sliced
- 1 small green bell pepper, diced
- 2 cloves garlic, minced
- 150 g green peas
- 1.5 liters chicken stock
- 2 bay leaves
- 1 teaspoon dried tarragon
- ½ teaspoon black pepper
- Salt, to taste
- 150–200 ml heavy cream
- 2 tablespoons sour cream
- 1 tablespoon all-purpose flour
- 1–2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
- Fresh tarragon, for serving
Instructions
1. Prepare the chicken
Heat the oil or butter in a large pot over medium heat. Add the chopped chicken and cook for several minutes until lightly browned. Remove the chicken and set aside.
2. Sauté the vegetables
Add the onion to the same pot and cook until softened. Add the carrots, parsley root or parsnips, and bell pepper. Cook for about 5 minutes, stirring occasionally.
Add the garlic and cook for another 30 seconds.
3. Build the soup
Return the chicken to the pot and pour in the chicken stock. Add the bay leaves, tarragon, salt and black pepper.
Bring the soup to a gentle boil, then reduce the heat. Cover and simmer for approximately 20–25 minutes, or until the chicken and vegetables are tender.
4. Add the peas
Stir in the green peas and continue cooking for another 5 minutes.
5. Make it creamy
In a small bowl, whisk together the heavy cream, sour cream and flour until smooth.
Slowly add a ladleful of hot soup to the cream mixture while whisking. This helps prevent the cream from curdling.
Gradually pour the mixture back into the soup while stirring continuously.
6. Finish with lemon and herbs
Simmer gently for another 3–5 minutes. Do not allow the soup to boil vigorously after adding the cream.
Remove the bay leaves and stir in the lemon juice and chopped parsley. Taste and adjust the salt, pepper and lemon juice according to your preference.
How to Serve
Ladle the hot soup into bowls and garnish with fresh parsley and a little tarragon. A few drops of fresh lemon juice just before serving can brighten the creamy broth beautifully.
Serve with fresh Hungarian bread, crusty sourdough, or homemade rolls.
Tips for the Best Hungarian Chicken Ragout Soup
- Chicken thighs give the soup a richer flavor, while chicken breast creates a lighter version.
- Don't boil the soup aggressively after adding the cream and sour cream.
- Add the lemon juice gradually so you can control the final balance of flavors.
- Fresh tarragon provides the most distinctive Hungarian character, but dried tarragon can be used when fresh herbs are unavailable.
- For an even richer soup, replace part of the chicken stock with additional cream.
- The soup often tastes even better after resting for a few minutes before serving.
