 Ingredients

For the Cake Layers

6 egg whites

150 g granulated sugar

150 g finely ground almonds

40 g all-purpose flour

1 teaspoon vanilla extract

A pinch of salt

For the Vanilla Buttercream

500 ml whole milk

5 egg yolks

100 g granulated sugar

40 g cornstarch

1 teaspoon vanilla extract

250 g unsalted butter, softened

For the Topping

200 g white fondant or white glaze

30 g dark chocolate, melted

100–150 g sliced almonds, lightly toasted

Instructions

Prepare the cake layers: Preheat the oven to 180°C (350°F). Whip the egg whites with the salt until foamy, then gradually add the sugar and beat until stiff and glossy.

Gently fold in the ground almonds, flour, and vanilla. Spread the batter into thin, even circles on baking paper.

Bake each layer for about 8–12 minutes, until lightly golden. Allow the layers to cool completely.

Make the buttercream: Whisk the egg yolks, sugar, cornstarch, and a little milk together. Heat the remaining milk with the vanilla, then gradually whisk it into the egg mixture.

Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thick. Cool completely.

Beat the softened butter until creamy. Gradually add the cooled vanilla custard and beat until smooth and fluffy.

Assemble the cake: Place one cake layer on a serving plate and spread a thin layer of buttercream over it. Continue layering until all the cake layers are used. Cover the top and sides with a thin layer of buttercream.

Press the toasted sliced almonds onto the sides of the cake.

Decorate the top: Spread a smooth layer of white fondant or white glaze over the top. Pipe thin circles of melted chocolate on the surface, then drag a toothpick from the center toward the edge at regular intervals to create the classic Esterházy spiderweb pattern.

Refrigerate the cake for at least 4–6 hours, preferably overnight, before slicing.

Serving

Serve the Esterházy Torte chilled, cut into thin slices. The combination of almond sponge, vanilla buttercream, toasted almonds, and chocolate makes this a rich and elegan
