🇭🇺 Hungarian-Style Meat Rolls with Braised Sauerkraut

 Ingredients

For the Meat Rolls

500 g (1.1 lb) ground pork or a pork-beef mixture

1 small onion, finely grated

2 cloves garlic, minced

1 egg

3 tbsp breadcrumbs

1½ tsp sweet Hungarian paprika

½ tsp ground caraway seeds

½ tsp black pepper

1 tsp salt

1 tbsp chopped fresh parsley

1 tbsp vegetable oil

For the Sauerkraut

500 g sauerkraut, drained

1 small onion, finely sliced

1 tbsp vegetable oil or butter

1 tsp sweet paprika

½ tsp caraway seeds

100 ml (⅓ cup) water or stock

Salt and pepper to taste

Instructions

Prepare the meat mixture:

Combine the ground meat, onion, garlic, egg, breadcrumbs, paprika, caraway, pepper, salt, and parsley. Mix gently until well combined.

Shape the rolls:

Divide the mixture into 6–8 portions and shape each into a thick, compact cylinder.

Brown the meat:

Heat the oil in a large skillet over medium heat. Brown the meat rolls on all sides for about 8–10 minutes, turning regularly.

Cook through:

Reduce the heat, cover the skillet, and cook for another 8–10 minutes, or until the meat is fully cooked.

Prepare the sauerkraut:

In another pan, heat the butter or oil. Add the onion and cook until soft. Remove the pan briefly from the heat, stir in the paprika, then add the sauerkraut, caraway seeds, and water or stock.

Simmer:

Cover and simmer for about 15–20 minutes, stirring occasionally. Season with salt and pepper.

Serve:

Arrange the golden-brown meat rolls over the warm sauerkraut. Serve with roasted red peppers or Hungarian paprika paste on the side.
