Hungarian Beef Goulash (Marhagulyás)
Ingredients
800 g (1.8 lb) beef chuck, cut into cubes
2 large onions, finely chopped
2 tbsp vegetable oil or lard
2 tbsp Hungarian sweet paprika
2 cloves garlic, minced
1 tsp caraway seeds
2 tomatoes, diced
1 red bell pepper, chopped
3 medium potatoes, peeled and cubed
1.2 L (5 cups) beef broth or water
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Heat the oil in a large pot and sauté the onions until golden brown.
Remove the pot from the heat and stir in the paprika to prevent burning.
Add the beef cubes and mix well to coat them with the paprika and onions.
Add the garlic, caraway seeds, tomatoes, and bell pepper. Cook for 5 minutes.
Pour in the broth, bring to a boil, then reduce the heat and simmer for about 1.5–2 hours until the beef is tender.
Add the potatoes and cook for another 25–30 minutes until soft.
Season with salt and black pepper.
Serve hot, garnished with fresh parsley and accompanied by crusty bread.
