Hungarian Jam-Filled Pancakes (Palacsinta)
Ingredients
For the pancakes:
2 cups (250 g) all-purpose flour
2 eggs
2 cups (480 ml) milk
½ cup (120 ml) sparkling water
1 tablespoon sugar
1 teaspoon vanilla extract
A pinch of salt
2 tablespoons melted butter or vegetable oil
For the filling:
1 cup apricot or strawberry jam
Powdered sugar, for serving
Instructions
In a large bowl, whisk together the eggs, milk, sparkling water, sugar, vanilla, and salt.
Gradually add the flour and whisk until you have a smooth, thin batter.
Stir in the melted butter or oil.
Heat a lightly greased non-stick frying pan over medium heat.
Pour a small ladleful of batter into the pan and swirl it to make a very thin pancake.
Cook for about 1–2 minutes, then flip and cook the other side for about 30 seconds.
Repeat until all the batter is used.
Spread each pancake with apricot or strawberry jam.
Roll the pancakes tightly, as shown in the picture.
Arrange them on a plate and dust with powdered sugar.

For a more traditional Hungarian flavor, use apricot jam and serve the palacsinta warm with
a little powdered sugar.
