Ingredients

2 cups all-purpose flour
2 eggs
2 cups milk
½ cup water
1 tablespoon sugar
A pinch of salt

3 tablespoons sugar
1 teaspoon vanilla extract
1 tablespoon sour cream

Instructions
Make the batter: In a large bowl, whisk together the eggs, milk, water, flour, sugar, and salt until smooth. Stir in the vegetable oil.
Cook the crêpes: Heat a lightly greased non-stick pan over medium heat. Pour in a small amount of batter and swirl the pan to make a thin crêpe. Cook for about 1–2 minutes on each side. Repeat with the remaining batter.
Prepare the filling: Mix the cottage cheese, sugar, vanilla, sour cream, and lemon zest. Add raisins if desired.
Fill the crêpes: Spread some cottage-cheese filling over each crêpe and roll it tightly.
Serve: Dust with powdered sugar and serve warm with sour cream or vanilla sauce.
