Hungarian-Style Roasted Potatoes with Smoked Sausage
Ingredients
500 g baby potatoes
2 Hungarian smoked sausages (kolbász), sliced or left whole
2 tbsp vegetable oil or lard
1½ tsp sweet Hungarian paprika
½ tsp smoked paprika
2 cloves garlic, minced
½ tsp caraway seeds
Salt and black pepper, to taste
1 small onion, sliced
1 tbsp chopped fresh parsley
Instructions
Prepare the potatoes: Wash the potatoes and cut larger ones in half. Leave small potatoes whole.
Season: Place the potatoes in a bowl and toss with oil, paprika, garlic, caraway seeds, salt, and pepper.
Roast: Spread the potatoes and sliced onion on a baking tray. Roast at 200°C (400°F) for about 30–40 minutes, turning them halfway through.
Add the sausage: Place the smoked sausage on the tray during the last 15–20 minutes of cooking, until browned and heated through.
Finish: Sprinkle with fresh parsley and serve hot.
Serving suggestion
Serve with sour cream and pickles on the side. For a more traditional Hungarian flavor, use Hungarian paprika and smoked pork sausage (kolbász).
Tip: For potatoes that look like the ones in your photo, boil them for about 8–10 minutes first, drain well, then season and roast until
golden and crispy.
