Hungarian Cheese Pogácsa (Sajtos Pogácsa)
Ingredients
500 g all-purpose flour
200 g butter, softened
150 g sour cream
150 g grated cheese (Gouda, Edam, or Hungarian cheese)
1 egg
20 g fresh yeast (or 7 g dry yeast)
100 ml warm milk
1 teaspoon sugar
1 teaspoon salt
1 egg yolk, for brushing
50 g grated cheese, for topping
Instructions
Activate the yeast: Mix the warm milk with the sugar and yeast. Leave for 5–10 minutes until foamy.
Make the dough: Combine the flour and salt. Add the butter, sour cream, egg, grated cheese, and yeast mixture. Knead until you have a soft, smooth dough.
Let it rise: Cover and leave in a warm place for about 1 hour, or until doubled in size.
Fold the dough: Roll it out, fold it into thirds, then roll it out again. Repeat 2–3 times. This creates the beautiful flaky layers.
Shape: Roll the dough to about 2 cm thick. Cut into small rounds with a cookie cutter. Score the tops lightly with a knife.
Brush: Place on a baking tray, brush with beaten egg yolk, and sprinkle with grated cheese.
Bake: Bake at 200°C (390°F) for about 15–20 minutes, until golden brown.
Serve: Let them cool slightly and enjoy warm.
