Hungarian Stuffed Cabbage Rolls (Töltött Káposzta)

Hungarian Stuffed Cabbage Rolls, known as Töltött Káposzta, are one of Hungary’s most beloved traditional comfort foods. Tender cabbage leaves are filled with seasoned ground pork and rice, then slowly cooked in a rich paprika-tomato sauce with sauerkraut. The result is hearty, flavorful, and wonderfully comforting.

Ingredients

For the Cabbage Rolls

  • 1 large head of green or white cabbage
  • 700 g (1½ lb) ground pork
  • 100 g (½ cup) uncooked white rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon sweet Hungarian paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried marjoram
  • 1 egg

For the Sauce

  • 500 g (about 1 lb) sauerkraut, lightly drained
  • 400 g (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 medium onion, chopped
  • 2 tablespoons lard or vegetable oil
  • 1 tablespoon sweet Hungarian paprika
  • 500–700 ml (2–3 cups) water or chicken stock
  • 2 bay leaves
  • Salt and black pepper, to taste

Optional

  • 150–200 g smoked bacon, diced
  • Sour cream, for serving
  • Fresh parsley, for garnish

Instructions

1. Prepare the Cabbage

Bring a large pot of salted water to a boil.

Carefully remove the core from the cabbage. Place the whole cabbage into the boiling water and cook for several minutes. As the leaves soften, carefully peel them away one at a time.

Continue until you have enough large, flexible leaves for the rolls.

Trim the thick central vein from each leaf if necessary so the cabbage is easier to roll.

2. Prepare the Filling

In a large bowl, combine the ground pork, uncooked rice, chopped onion, garlic, paprika, salt, pepper, marjoram, and egg.

Mix gently until everything is evenly combined.

Do not overmix, as this can make the filling dense.

3. Roll the Cabbage

Place a cabbage leaf on a work surface.

Put approximately 1–2 tablespoons of filling near the bottom of the leaf. Fold the sides inward, then roll it firmly into a cylinder.

Repeat with the remaining cabbage leaves and filling.

If you have leftover filling, shape it into small meatballs and cook them together with the cabbage rolls, just as shown in the photo.

4. Prepare the Paprika Sauce

Heat the lard or oil in a large heavy-bottomed pot.

Add the chopped onion and cook over medium heat until softened.

Remove the pot briefly from the heat and stir in the Hungarian paprika. This helps prevent the paprika from burning and becoming bitter.

Add the tomato paste, crushed tomatoes, water or stock, bay leaves, salt, and pepper.

Stir well.

5. Layer the Cabbage

Spread some sauerkraut over the bottom of the pot.

Arrange the cabbage rolls tightly on top.

Add another layer of sauerkraut, then place any remaining rolls or meatballs on top.

Pour the tomato-paprika sauce over everything. Add enough water or stock so the cabbage rolls are almost covered.

6. Slow Cook

Bring the pot to a gentle simmer.

Cover and cook over low heat for approximately 1½–2 hours, until the cabbage is extremely tender and the meat and rice are completely cooked.

Avoid vigorous boiling, as it can cause the cabbage rolls to break apart.

7. Serve

Allow the dish to rest for about 10–15 minutes before serving.

Serve the cabbage rolls hot with plenty of the rich paprika-tomato sauce and sauerkraut.

A generous spoonful of sour cream on top is the classic Hungarian finishing touch.

Expert Tips

  • Use sweet Hungarian paprika for the characteristic flavor and color.
  • For a richer traditional taste, use a mixture of ground pork and smoked bacon.
  • Don't overfill the cabbage leaves because the rice expands as it cooks.
  • Cooking the rolls slowly makes the cabbage tender and allows the flavors to develop.
  • Töltött káposzta often tastes even better the next day after the flavors have had time to develop.
  • Serve with crusty bread to soak up the delicious paprika sauce.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3–4 days. The dish can also be frozen for up to 3 months.

Thaw overnight in the refrigerator and reheat gently on the stovetop.
