Ingredients
For the Walnut Sponge
- 6 large eggs, separated
- 150 g granulated sugar
- 120 g finely ground walnuts
- 100 g all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Pinch of salt
For the Vanilla Cream
- 750 ml whole milk
- 2 packets vanilla pudding powder, or about 70 g cornstarch
- 120 g granulated sugar
- 2 teaspoons vanilla extract
- 200 g unsalted butter, softened
For the Apricot Layer
- 180–200 g apricot jam
For the Chocolate Glaze
- 150 g dark or semi-sweet chocolate
- 50 g unsalted butter
- 2 tablespoons heavy cream or milk
Instructions
1. Prepare the Walnut Sponge
Preheat the oven to 180°C (350°F). Line a large rectangular baking pan with parchment paper.
Beat the egg whites with the salt until soft peaks form. Gradually add half of the sugar and continue beating until glossy and firm.
In a separate bowl, beat the egg yolks with the remaining sugar and vanilla until pale and creamy.
Gently fold the ground walnuts and sifted flour mixed with baking powder into the egg yolk mixture. Carefully fold in the whipped egg whites in several additions, keeping as much air in the batter as possible.
Spread the batter evenly in the prepared pan.
Bake for 20–25 minutes, or until lightly golden and a toothpick inserted in the center comes out clean. Allow the sponge to cool completely.
2. Make the Vanilla Cream
Whisk the pudding powder or cornstarch with a small amount of the milk until smooth.
Heat the remaining milk with the sugar in a saucepan. Pour in the pudding mixture and cook over medium heat, stirring constantly, until thick and creamy.
Remove from the heat, stir in the vanilla, and cover the surface with plastic wrap. Allow the custard to cool completely.
Beat the softened butter until light and fluffy. Gradually add the cooled custard, beating continuously until you have a smooth, silky cream.
3. Assemble the Cake
Cut the cooled walnut sponge into three equal rectangles.
Place the first layer on a serving board or tray.
Spread a generous layer of vanilla cream over the sponge. Place the second sponge layer on top.
Spread the apricot jam evenly over the second layer, then add another layer of vanilla cream.
Finish with the final sponge layer and gently press the cake to make the layers even.
For the cleanest slices, refrigerate the assembled cake for at least 4–6 hours, preferably overnight.
4. Add the Chocolate Topping
Melt the chocolate and butter together over a gentle water bath or in short intervals in the microwave.
Stir in the cream or milk until smooth and glossy.
Spread the chocolate glaze evenly over the chilled cake.
Return the cake to the refrigerator for 30–60 minutes, just until the chocolate topping is set but still easy to cut.
5. Slice and Serve
For neat Hungarian-style slices, use a sharp knife warmed under hot water and wiped dry between cuts.
Cut into rectangular pieces and serve chilled or slightly softened at room temperature.
Expert Tips for the Best Hungarian Walnut Cake
- Use finely ground walnuts for a delicate sponge and authentic nutty flavor.
- Make sure the custard is completely cool before combining it with the butter.
- Don't overmix the sponge batter after adding the whipped egg whites.
- Use a good-quality apricot jam for the best balance between sweetness and acidity.
- Chill the cake overnight if possible. The sponge becomes wonderfully tender as the cream settles into the layers.
- Score the chocolate topping lightly before it completely hardens if you want perfectly clean slices.
Storage
Store the cake covered in the refrigerator for up to 4 days. Because it contains a cooked custard and buttercream, keep it refrigerated.
For the best flavor and texture, remove the cake from the refrigerator about 15–20 minutes before serving.
