Hungarian-Style Pasta with Cottage Cheese and Bacon (Túrós Csusza)
Ingredients
400 g wide egg noodles or ribbon pasta
200 g Hungarian-style cottage cheese (túró) or dry-curd cottage cheese
150 g smoked bacon, diced
150 g sour cream
1 small onion, finely chopped
Salt, to taste
Black pepper, to taste
1 tablespoon butter
2 tablespoons chopped fresh parsley
Instructions
Cook the pasta: Boil the noodles in salted water until tender. Drain, reserving a little pasta water.
Cook the bacon: Fry the diced bacon in a pan over medium heat until crisp. Remove some bacon for topping.
Prepare the onion: Add the chopped onion to the bacon fat and cook until soft and lightly golden.
Combine: Toss the cooked pasta with the butter, cottage cheese, sour cream, and onion-bacon mixture. Add a splash of pasta water if needed.
Season: Add salt and freshly ground black pepper to taste.
Serve: Spoon onto plates and top with extra sour cream, crispy bacon, cottage cheese, and fresh parsley.
