Hungarian Cheese-Filled Pastry Rolls (Sajtos Rúd)
Ingredients
500 g puff pastry or filo pastry
250 g farmer’s cheese or cottage cheese
100 g grated cheese (Edam or Gouda)
1 egg
2 tablespoons sour cream
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon sweet Hungarian paprika
1 tablespoon chopped fresh parsley
1 egg yolk, for brushing
1 tablespoon sesame seeds or caraway seeds
Instructions
Prepare the filling: In a bowl, mix the cottage cheese, grated cheese, egg, sour cream, salt, pepper, paprika, and parsley.
Prepare the pastry: Roll out the pastry and cut it into rectangular pieces.
Fill: Place a spoonful of the cheese mixture along one side of each piece. Roll tightly and seal the edges.
Brush: Arrange the rolls on a baking tray lined with parchment paper. Brush with beaten egg yolk and sprinkle with sesame or caraway seeds.
Bake: Bake in a preheated oven at 190°C (375°F) for about 20–25 minutes, until golden brown and crisp.
Serve: Allow them to cool for a few minutes and serve warm.
Tip: For a more Hungarian flavor, use sweet Hungarian paprika
and caraway seeds.
